Special Fried Rice
1 large carrot (grated)
100g snow peas (sliced to desired size, i slice in half)
300g corn kernels (frozen)
4 green shallots (thinly sliced)
1 cup raw rice
1 tblsp soy sauce
1 tblsp tomato sauce
1/4 cup cooked prawns chopped (if desired)
1. Cook 1 cup of raw rice, leave to cool down
2. Beat the eggs with a fork. Heat a wok or large frying pan with and grease with a little oil or cooking spray. Pour eggs in and cook to form an omelette. Remove omelette from wok and set aside, cool slightly and then cut into small pieces.
3. Add carrot and snow peas to the wok and cook for about 2 minutes. Add corn shallots and omelette and cooked rice and continue stir-frying until all ingredients are combined.
4. Mix in soy sauce and tomato sauce and add prawns. Stir until all combined and heated through. Serve immediately and Enjoy...
