Monte Creams!

Monte Creams!

These were mega scrummy!! and were eaten for dessert on Sunday night!! :D here is the recipe for you to try too.......

125g unsalted butter
1/2 cup caster sugar
1/4 cup milk
1 and a 1/2 cups self raising flour
1/4 cup custard powder or instant vanilla pudding mix (I used custard powder)
1/3 cup dessicated cocount
custard powder or instant vanilla pudding mix, extra

75g unsalted butter
2/3 cup icing sugar
2 teaspoons milk
105g strawberry jam

1. Preheat the oven to 180 degrees. Line two baking trays with baking paper.

2. Cream the butter and sugar in a bowl using electric beaters until light and fluffy. Add the milk and beat until combined. Sift the flour and custard powder and add to the bowl with the coconut. Mix to form a soft dough.

3. Roll 2 teaspoons of the mixture into balls. Place on trays and press with a fork. Dip the fork in the extra custard powder occasionally to prevent sticking.

4. Bake for 15 - 20 minutes, or until golden. Transfer to a wire rack to cool completely.

5. To make the filling, beat the butter and icing sugar in a bowl using electric beaters until creamy. Beat in the milk.

6. Spread one biscuit with 1/2 teaspoon of the filling and one with 1/2 teaspoon of jam, then press together.
